Description

tasty corn chowder to make use of fall harvest

Ingredients

  • 6 tbsp olive oil or butter
  • 2 c chopped leeks
  • 3 c diced potatoes
  • 6 c water
  • 6 c cups corn (1 lrg package frozen)
  • 1 c minced fresh parsley
  • 1 1⁄2 tsp sea salt
  • 1⁄2 tsp pepper
  • 1 tsp dillweed and tarragon
  • 1 c cashew milk

Instructions

In a large pot saute leeks in oil or butter
Add potatoes saute a bit more
Add water and bring to boil - then simmer till potatoes are soft
Add corn, parsley, and herbs - cook 10 more minutes
Blend part of the soup and then return it to the pot.
Add cashew milk and serve as soon as chowder is heated through.
You can use a real dairy or another non-dairy sub of your choice and it works just fine - happy cooking :-)
